*0.5 lb. (225g) beef
*1 T. minced fermented black
beans
*0.5 T. each: sesame oil,
minced garlic, green
onions, ginger root
*total of 1.5 c. (sliced):
onion, green & red peppers
*1 T. soy sauce, 0.25 t. salt
*0.5 t. sugar, 5 T. water
*dash of pepper
*1 t. each: wine, cornstarch
Method:
1. Cut beef into 2-inch wide
strips along grain, then
slice across the grain;
mix in soy sauce, wine,
cornstarch and water. Mix
1 T. oil with beef before
frying so beef will
separate easily during
frying.
2. Heat 1.5 T. oil then stir-
fry beef until medium
well; remove. Use
remaining oil to stir-fry
green onions, ginger
root, and asparagus until
fragrant. Add mixed soy
sauce, salt, sugar, water
and pepper beef. Cover
and cook until steaming,
then stir-fry to mix
well. Remove, sprinkle
with sesame seeds and
serve.
