*20 oz. broccoli
*12 oz. stringy beef
*several slices of ginger
and carrot
*0.5 t. chopped garlic
*1 t. wine
*1 T. oil
Marinade:
*1 t. each of ginger juice
and wine
*0.25 t. sugar
*1 t. dark soy sauce
*0.75 t. potato starch
*1 T. oil
Thickenings:
*1 t. light soy sauce
*0.25 t. each of salt and sugar
*0.5 t. potato starch
*a dash of each of sesame
oil and pepper powder
*2 T. water
Method:
1. Clean the stringy beef,
slice thinly, mix well
with the marinade, scald
in warm oil.
2. Cut the broccoli into small
flowret, soak in diluted
salt water for 10 minutes,
wash clean, scald in
boiling saltwater till
80% done.
3. Heating 1 T. of oil, fry
the chopped garlic, ginger
slices and carrot; return
the stringy beef to the
wok, sprinkle with wine
and the broccoli, stir-in
the well mixed thickenings.
Mix all the ingredients
well andtransfer to a
plate.
