*0.5 lb. (225g) beef
*1 T. each: soy sauce,
wine
*1 T. each: cornstarch,
water
*total of 1.5 c. (sliced):
onion, tomato, green
pepper
*3 T. ketchup
*0.5 T. each: soy sauce,
sugar
*0.25 t. salt, 4 T. water
*1 t. cornstarch
Method:
1. Cut beef into 2-inch wide
strips along grain, then
slice across the grain;
mix in soy sauce, wine,
cornstarch and water. Mix
1 T. oil with beef before
frying so beef will
separate easily during
frying.
2. Heat 1.5 T. oil then
stir-fry beef until medium
well; remove. Use remaining
oil to stir-fry onion,
tomato and pepper. Add soy
sauce, sugar, salt, water,
cornstarch and beef. Cover
and cook until steaming;
stir to mix well.
