*2 meat crabs about 20 oz.
in weight
*8 oz. welsh onions
*6 oz. ginger
*10 shallots
Cornstarch Solution:
*1 t. each of brown sugar
powder and potato starch
*0.5 t. salt
*5 T. water
Method:
1. Clean, section and drain
the crabs.
2. Clean and section the
welsh onions; peel the
ginger, cut up into thick
slices.
3. Scald the crabs in oil
till 80% done, scoop out.
4. Heating 0.5 cup of oil,
saute the ginger pieces
with shallots and a half
of the welsh onions. Add
the crabs, cover and
simmer for 3 minutes.
Sprinkle with wine. Stir
in cornstarch solution,
cover and simmer for
another 8 minutes. Add the
remaining welsh onions;
mix well to serve.
