Filling:
*0.25 lb. ground beef or pork
*0.75 lb. raw, shelled shrimp
*0.5 lb. yellow Chinese
chives
*1 t. salt
*0.5 t. pepper
*1 t. sesame oil
Skin:
*2 C. flour
*5 T. shortening or pork fat
*10 T.water
*0.25 t. salt
*1 C. flour
*5 T. shortening or pork fat

Method:
1. Filling: Chop the ground
beef and shrimp. Cut the
chives into small pieces;
add to salt, pepper and
oil mix well. Divide the
filling into 20 portions.
2. Skin: Mix the ingredients of
flour, shortening and water
together to make a smooth
dough; knead briefly until
very smooth; let stand for
20 minutes then roll into a
baton-like roll and cut it
into 20 pieces.
3. Use a rolling pin to roll a
piece of dough into 3"
circle; make the edges
thinner than the middle.
Place 1 portion of fillling
in the center of the circle;
fold the dough to form a
triangle.
4. Heat the oil for deep-frying.
Deep-fry the buns over low
heat for 8 minutes or until
cooked. Or preheat the oven
to 375F and bake the buns
for 20 minutes.
