Dough:
*2.5 c. flour
*0.75 c. boiling water
*1 egg or 0.25 c. cold water
*1 T. sesame oil
Method:
1. Dough: In a bowl, add
boiling water to flour and
mix. Add egg or cold water;
mix again until smooth. Set
aside for 20 minutes.
Remove the dough and
knead it on a lightly oiled
surface until smooth and
elastic. Roll the dough to
form a long roll and cut it
into 20 pieces.
2. Flatten each piece of dough
with the palm of the hand
into a 4 - inch round piece;
spread lightly with sesame
oil. Place two pieces of
dough on top of each other.
Press the round dough pieces
together. Roll them out to a
6-inch, thin round dough.
Follow step for the remaining
pieces of dough.
3. Heat the pan until medium
hot; fry the pieces of dough
over low heat for about 20
seconds or until small,
golden bubbles appear on
fried side. While frying,
use finger tips to constantly
rotate pancakes in a
clockwise direction to fry
evenly. Turn pancake over
and repeat procedure.
Remove and separate the
pancakes; fold them into
quarters and arrange them
on a serving plate. Cover
with a damp cloth to keep
them warm and moist.
