Filling:
*20 salty egg yolks
*4 c. red bean paste
*1 moon cake mold
*0.75 c. melted butter
*Dough:
*4.5 c. flour
*0.5 c. powdered milk
*0.5 T. baking powder
*1.25 c. sugar
*4 eggs
Method:
1. Filling: Preheat oven to
350F , Place the egg yolks
on a cookie sheet and bake
them for 10 minutes; remove.
Divide the red bean paste
into 20 portions. Put 1 egg
yolk into 1 portion of the
bean paste. Use the hands
to roll it into a ball so
that the bean paste covers
the egg yolk.
2. Dough: Sift flour, powdered
milk and baking powder.
Beat sugar and eggs for 10
minutes. Add melted butter
then add flour and powdered
milk; lightly mix well.
Divide the mixture into 20
portions.
3. Preheat the oven to 400F.
Take 1 portion of dough and
flatten it with the palm of
the hand to form one 4-inch
circle. Place one portion
of filling in the center
of the dough and wrap it
to enclose the filling.
Pinch the edges to seal
them. Roll the dough to
form a ball with a
smooth surface. Lightly
flour the mold and place
the filled dough in the
mold; press the dough to
fill the mold. Gently tap
the mold to loosen the
dough and to remove it.
Make the other cakes in
the same manner. Place the
cakes on a cookie sheet and
brush egg yolk on top of
them. Bake for 30 minutes;
remove and serve.
