* 1.5 c. flour
*0.75 T. baking powder
*2 large eggs
*2 t. water
* oil
*0.5 c. sugar
*0.25 c. maltose or honey
*0.25 c. water
*0.5 T. lemon juice or
vinegar
* Baking pan (11''x12''x2'')
*0.5 T. pre-cooked white
sesame seeds
*2 T. raisins
*2 T. each: coriander,
shredded red or green
candied fruit
*0.5 c. crushed peanuts
Method:
1. In a bowl, beat the eggs
and 2 T. water. Add flour
and baking powder knead
it into a smooth dough;
add flour, if the dough
is too sticky. Let the
dough stand for 30
minutes.
2. Roll out the dough. Cut
the dough into 1-inch
strips then shred them
in the opposite
direction into 0.25''
pieces.
3. Heat the oil for
deep-frying; add the
shreds and deep-fry
them over medium heat
until light golden.
Remove and drain. Place
the shreds in a large
mixing bowl.
4. Bring sugar, maltose or
honey, water and lemon
juice or vinegar to a
boil; turn the heat to
low and cook for 2
minutes or until the
sugar is completely
dissolved. Pour the
mixture over the fried
shreds; immediately mix
well to coat them.
Place pre-cooked white
sesame seeds, raisins
and crushed peanuts in
the baking pan. Spread
the coated shreds in
the pan and press them
into compact, 1.5'' thick
pieces; allow the cake
to cool and cut it into
pieces. serve.
