*2- 0.75 oz. (75 g.) chicken
breast
*0.25 t. salt
*1 t. cooking wine
*0.5 egg white
*1 T. cornstarch
*1 T. green onion (chopped)
*7 oz. (200 g. )peas
(cooked)
*0.25 t. salt
*0.25 t. sesame oil
*2 T. vegetable oil
Method:
1. Cut chicken breast into
strips. Add salt, wine,
egg white and cornstarch
marinate for 10 minutes.
2. Heat 2 T. oil in
preheated wok. Stir-fry
chicken over medium
heat until white.
Remove from heat. In
remaining oil, stir-
fry green onion until
fragrant. Add peas,
chicken, and salt and
oil. Mix evenly and
remove from heat.
