*1 pig's heart, 4T. Chopped
Celery, 3 T. chopped leaf
mustard, 3 T. chopped
Chinese mushroom, 3 T.
water chestnuts, 2 T.
spring onion, 1 T.
ginger, 10 leaves
lettuce, rice
vermicelli.
*0.25 t. pepper, 0.25 t.
1 t. salt, 2 T. water,
1 T. cornstarch.
*3 eggs, 2 T. cornstarch.
Method:
1. Remove membrane of the
heart. Chopped finely
and marinate with for
10 minutes. Run through
warm oil to cook
lightly. Drain.
2. Deep fry rice vermicelli
in 3 cups of oil until
puffy. Remove to plate.
3. Saute chopped Chinese
mushroom, chopped leaf
mustard, water chestnuts,
spring onion and ginger
in 2 T. of oil. Add
pepper, salt, water and
cornstarch. Stir-fry
until well mixed.
Scoop on to deep fried
rice vermicelli. Serve
with lettuce.
