*10 oz. pork loin, 1 stalk of
scallion. 0.25 t. salt, 1
t. wine, half a white of
egg, 2 t. cornstarch.
*1 T. sweet bean squce, 1 t.
sugar, 1 t. soy sauce, 1
T. water, 1 t, seame oil.
Method:
1. Cut pork loin into fine
strips. Add salt, wine,
egg and cornstarch to
marinate for 10 minutes.
Line shredded scallion
on plate.
2. Run pork loin in 2 cups
of luke warm oil. Drain.
3. Mix tea leaves and
sugar in bowl.
4. Heat wok with 1 T. oil.
Pour sweet bean sauce,
sugar, soy sauce, water
and oil in and bring
to boil. Add pork loin;
stir well; scoop at once
onto the scallion lined
plate. Toss before
serving.
