*2 pieces E-Fu noodles
*6 oz. shelled shrimps
*4 oz. ham
*2 chicken eggs
*5 green string beans
*2 T. cucumber shreds
*adequate amount of fried
white sesame
*1 c. stock
Seasonings:
*1 t. light soy sauce
*a dash each of pepper and
sesame oil
*adequate amount of salt
Method:
1. Scald the E-Fu noodles in
boiling water, scoop them
out, put them in stock to
boil over slow heat for a
while; scoop them out;
drain and place them in a
plate.
2. Wash shelled shrimps
clean devein; wash green
string beans clean and
cut them into lengths,
shred ham, beat eggs;
shallow-fry into an egg
sheet and shred.
3. Scald green string beans
in boiling stock until
they change color,
shelled shrimps, ham and
cucumber shreds until
cooked; scoop them out
quickly and garnish
with egg shreds around
the noodles to make a
cold dish.
4. Add seasonings and
sprinkle white sesame
over for serving.
