*0.5 lb. (225g) shelled shrimp
*1 T. wine
*dash of pepper
*0.25 t. salt
*0.75 T. cornstarch
*0.5 c. white part of green
onions or onion, chopped
*0.5 T. each: minced garlic,
ginger root
*1 t. hot bean paste or hot
chili paste
*3 T. ketchup
*1 T. each sugar, wine
*0.75 t. salt
*0.5 T. each: sesame oil,
cornstarch
*0.75 c. chicken stock or water
Method:
1. Marinate shrimp in wine,
salt and cornstarch. Add
1 T. oil before frying
to separate shrimp.
2. Heat 1.5 T. oil then stir-fry
shrimp until medium well;
Use remaining oil to stir-
fry green onions, minced
garlic and ginger root until
fragrant; mix and add sugar,
wine, salt, oil, cornstarch
and water, then bring to
a boil. Stir to mix well.
