*7 oz (200 g) lean boneless
pork
*7 oz (200 g) scallions
*4 T. vegetable oil
*1 T. soy sauce
*5 wood ears, reconstituted
in hot water
Method:
1. Cut the pork into slices
about 1.25 inch by 0.5 inch
by 0.25 inch (3 cm by 16 mm
by 8 mm). Cut the
scallions diagonally
into 1.25-inch (3 cm)
sections.
2. Heat the oil in a wok to
very hot, 350F (180C).
Add the pork slices and
stir-fry for 30 seconds.
3. Add the soy sauce, wood
ears, and
scallions. Stir-fry for
2 more minutes, remove,
and serve.
