Dough:
*1.25 c. flour
*0.25 c. boiling water
*0.5 egg or 0.25c. cold water
*1 T. chopped green onions
*0.5 T. lard or shortening
*0.5 t. salt
Method:
1. Roll the dough to form
a long roll and cut it
into 6 pieces.
2. Use a rolling pin to
roll out each piece of
dough into a 4-inch
round piece. Brush a
piece of dough lightly
with 1 portion of the
shortening of;
sprinkle salt and
green onion . Fold
both sides to the
center to slightly
overlap. Lightly flatten
and roll over jelly-roll
style to form the shape
of a snail. Turn the
roll on its side and
flatten it to a round
shape. Follow step for
the remaining pieces of
dough.
3. Heat the pan then add
4 T. oil. stir-fry the
crepes until both sides
are golden; remove and
serve. Eggs may be
added to the crepes when
stir-frying.
