*1 duck, 4-5 lbs. (1800-
2250 g)
*0.5 c. tea leaves
*4 T. sugar
Method:
1. Rub in cavity and on skin
of duck; marinate at
least 30 minutes. Spread
onions, ginger root and
five-spice powder in
cavity of duck and seal
opening with toothpicks.
2. Mix in baking pan and put
pan on lower rack of
oven. Place duck on top
rack and roast at 400 F
1 hour. Cut duck in
pieces and serve with
dipping sauce. Or boil
duck 40 minutes then
roast and smoke 25
minutes.
