* 3 c. glutinous rice
*2.5 t. baking soda
*40 bamboo leaves
*20 pieces of string
Method:
1. Filling: Rinse the rice
until the water runs
clear then soak it in
water for 3 hours;
drain. Mix the rice
with baking soda.
2. Lengthwise, overlap 2
leaves together and
fold them into a
conical shape (to use
as the wrapper); one
end should be longer
than the other. Put 3 T.
of the filling in the
leaves. See below for
directions to wrap the
Zongzi. Wrap the leaves
loosely and tie them
with string (filling
will expand after
cooking). Follow the
same step for the other
"Zongzi". Place the
"Zongzi" in a pot then
add water to cover.
Bring the water to a
boil; turn the heat to
low and cook the
"Zongzi" for 2.5 hours.
Remove and allow to
cool. Serve with sugar,
syrup or honey.
